Red Wine 2021
In the glass, you can smell delicious aroma of ripe black cherries and notes of vanilla combined with red fruits such as strawberries and plums. In the mouth, moderate tannins with good acidity and medium concentration.
We received 1/3 of our annual rainfall in 2021. The spring was mild and spring flowers were early. This was followed by a heatwave in May, June & July of 90-105˚F + temps. This brought on an early and quick harvest starting on August 12th and ending October 20th. Despite the drought, our sheep were busy adding organic matter to the rows, to aid in soil moisture retention. The berries were small, but oh so concentrated. We are all looking forward to the delicious release of this vintage in a few years.
This Pinot Noir was harvested when the fruit flavors were abundant, and the acids were in balance with the brix. After pressing, the wine is aged in 30% French oak, contributing to its bright cherry notes on the palate, followed by pie spice, and a silky-
