Slow wine is the best wine, and this amazing Cabernet Sauvignon certainly took its time.

About this wine

Aromas of dried fruits, black currants, toasted hazelnuts, and dark chocolate fuse with flavors of savory herbs, worn leather, dried cherries and French oak to resonate up through the glass. It took us three years to find the very best block of Cabernet on our Home Ranch vineyard, and then two long years of barrel aging to allow all of the fruit components and tannins to meld naturally.

After years of scouring our extensive Home Ranch property, we’ve identified the finest blocks. The 2019 OVIS Cabernet Sauvignon is the culmination of years of thoughtful work in both the vineyard, and the winery. This blend is a combination of our highest tiered vineyard parcels, farmed specifically for maximum concentration and flavor. The deep garnet color, wonderful aromatics, and matured tannins are a dead giveaway of it’s High Valley origin. Sweet aromas of cherries, plums, and cassis are balanced with savory notes of thyme, and anis. The powerful tannins have softened through extended aging in a mix of new and used French oak barrels. This wine is perfect for your next dinner party, but will also hold up for many years to come. 

Vintage Notes

2019 was a wet spring followed by a mild summer. It was ideal for long hang time and getting phenolic ripeness. Early season frost singed low areas but cooled off all northern locations and allowed for extended hang time of our Cabernet and Petite Sirah. Acids remained naturally higher this vintage and brix were slow to accumulate until they spiked at the end of the season. Power shutoffs made pressing and pumping grapes difficult. In the end we got all the fruit in and made some beautiful wines for the mild season.
