The 2021 Ovis Cabernet Sauvignon is an elegant wine with a deep ruby red color. Red fruit aromas such as cassis, cherries and ripe plums are perceived in this wine, along with spicy fragrances such as black pepper and cloves. In the mouth it is a complex wine, with a good body and structure, round, ripe tannins and excellent length. The aging in oak brings flavors of toast, chocolate and vanilla.

Vintage Notes

In 2021, we experienced mild spring weather and early blooms, followed by a heatwave from May to July. Despite the drought, our sheep helped retain soil moisture, resulting in an early harvest from August 12th to October 20th, producing small but highly concentrated berries. This vintage promises exceptional depth and intensity.
