tannins, with a good fruit-oak balance making it a very elegant wine.

This Cabernet Sauvignon is a wine with an intense and dense red color. On the nose we find notes of black cherries, plums and hints of herbs, peppers and tobacco. On the palate it is a complex wine, with a good body and round tannins, with a good fruit-oak balance making it a very elegant wine. This wine is inspired by the sheep we use in our mountain estate vineyards and the 13 rams that propagate the flock. They are an important part of our Project Ovis.

Vintage Notes

The 2020 vintage started out dry and warm. Weeks of 100+ degree weather in early May gave the vines a jump start. The heat held strong until August with a record 116˚ day in July! We started harvest a week earlier than normal, with all white grapes in house and fermenting beautifully by Sept 20th. The temperature cooled down to 80s during the harvest lull and stretched out the hang time on our reds allowing phenolic ripeness of the skins. A welcome cloud cover came on October 10th and allowed the fruit to dehydrate and get more hang time. Tonnages ended up lighter due to low spring rains. We are seeing good color concentration and density in this vintage.
