Cabernet Sauvignon 2021
Crafted from High Valley grapes sourced from Betsy’s vineyard and Caldwell Block 12, we hold this intensely structured Cabernet Sauvignon in the highest esteem.
This wine has a deep, red color with violet reflections. On the nose there are notes of very ripe red fruit such as plum and strawberry, with slight notes of oak. On the palate it is very elegant with round and sweet tannins.
Named in memory of Clay Shannon's mother, Betsy’s vineyard has a northwest facing slope that allows longer ripening time, resulting in an intensely structured Cabernet. Using primarily French oak and cherry wood, the barrels are chosen to lift the fruit and add nice, toasted spices to the finish.
